Portuguese “Caldo Verde”
“Caldo Verde” is a very traditional Portuguese soup. The original recipe includes chorizo, however, I like it so much that I decided to make a meatless version. It is super simple and very healthy.
Preparation
First step is to prepare the vegetables. Chop the onion and garlic very finely and cut the potatoes into cubes.
The kale should be cut into very thin strips. Start by removing the stem from the leaves. Once all the stems have been removed, stack several sheets on top of each other. Roll them all together like a burrito and cut them into very thin strips.
When all the vegetables are ready chopped, put some olive oil in a pot and fry the onion and garlic until they become translucen. Add the potatoes and season with salt and pepper. Cook until you get a little color, about 10 minutes.
Add the vegetable broth (or water), enough to cover the potatoes and a little bit more. Boil until the potatoes are soft. With a spatula, start mashing the potatoes until the water thickens and becomes a potato broth. It does not need to completely liquefy. Once the potato broth is ready, let it boil once and put all the kale inside. Turn off the fire, cover and let it rest about 10 minutes.
In this version, I did not add anything to replace the chorizo. However, it can be replaced with soy sausage, or with some other vegetable such as mushrooms. These should be added to the recipe at the same time as the potatoes.
Serve hot, and squeeze some lime juice for taste.
