PODCAST: My Gastro-Ecological Philosophies (Spanish)

I was interviewed by a local Ensenada magazine, Revista Molcajete, that explored the gastronomy of the region. In this relaxed and fun conversation, I talk about my gastro-ecological philosophies. 

As a person deeply connected with my food choices, I don’t identify as any of the dietary categories nor dietary trends. I find categories to over-simplify an issue that is much more complex and composed of many important nuances that are overlooked when we simply categorize our relationship to food. In this article, I explore to a deeper degree this idea of tearing down titles in order to focus on what really matters to the environment and to our health; the origin and quality of a product.

In this episode of “Tres Para Llevar” I discuss these ideas, as well as FLEXITARIANISM as a soft and inclusive approach to the battle between vegan and carnivore discourses.
