“Dolce de Leite” Flan
I like to eat desserts but I never ever make them myself. Why? I simply did not grow up in a dessert-eating home and so I never developed the habit. While I spent a few weeks in Brazil with guests addicted to sugar, I took the opportunity to learn how to make some Brazilian desserts.
CARAMEL
To make the caramel, mix water and sugar in equal quantities.
Place a cup of water and another of sugar in a pot – boil for about 15 minutes. The water will begin to evaporate and the mixture will thicken. Let it boil without mixing. Check the consistency from time to time.
Mixing sugar with water prevents the caramel from becoming bitter.
Have the mold ready to quickly place the hot caramel.
Once the mixture has reduced and thickened, place it quickly in the mold before it hardens.
With a spoon distribute the liquid around the walls of the mold as it begins to harden.
FLAN
For the flan you will need a blender and a second and larger mold for the bain-marie (water bath).
The ingredients include 3 eggs, 1 can of dolce de leite, and one can of normal milk.

Place the three ingredients in the blender and mix until the mixture is well combined, about 1 minute.
Once the caramel has dried and hardened, fill the mold with the liquid mixture.
Cover mold with tin foil and place on a the larger mold. Pour boiling water in the bottom mold – 1 inch.
Bake about 1 hour 15 minutes at 185C. Check the consistency after 1 hour. If the toothpick comes out dry, it’s ready!
Allow it to cool several hours before turning it over to prevent it from breaking. Once turned over, put in the refrigerator and eat cold!
